Angry Bird/Rainbow Cake

December is the month where both my kids, Ayra and Adam celebrates their birthdays. Since their birthdays are just days apart, we usually celebrate both their birthdays together in one day. This year is no exception. Since I am maidless at the moment, it was decided that their birthday celebration be celebrated outside. Both the kids opted for A&W and it was agreed that we celebate it on 26th December 2011 due to the long holidays.

Few days before their birthday bash, Ayra developed fever and on Friday, she was down with serious stomach cramps. The clinic that we went to suggested that we bring her to the hospital as there were symptoms of dengue. Since my hubby was still in Labuan, I called my mom to help me out and off we went to Gleneagles and she was admitted that night. The doctor took blood test and did ultrasound and alhamdulillah, it was not dengue but due to some viral infection that led to the stomach cramps. She was discharged on Sunday and it was a marathon thereafter to get things ready for the birthday bash on Monday.
But alhamdilillah, I managed to bake their Angry Bird cake and bought party packs and all in all, it was a good celebration. The kids had fun and the adults catch up with each other for an overdue gossiping :)

Congo Bars

It was one of those lazy saturday afternoon whilst watching tv that suddenly I received a BB message from a friend asking me "Can you bake congo bars?..i'm browsing bakarella site and practically drooling seeing the pictures of her congo bars". I was like .."huh! Congo bars...nvr heard and obviously nvr baked"..."well go and check her site and go bake me some" was the reply I got from my "drill-Sargeant friend"..so "yes Madam! ok Madam...i will go and check bakarella site now..i answered sheepishly...:)

So, i started browsing bakarella site looking for her congo bars and just looking at her pictures made me  hooked. It looked delicious and from the recipe posted, it was not that difficult to do. I did more searches and realised that congo bars or "blondies" were quite famous in the US and everybody seems to love it due to its texture that's a cross between a brownie/cake and a cookie...seeing the rave reviews and mouth-watering pictures, i told myself that I have to do this..die die also must try and do. :)

So, after my little Marissa went to sleep, I told my 2 kids that I will be in the kitchen whipping up somethg to bake and its their tasks to listen to their sister in case she cried :) :) So, off I went to my little corner and armed with the ingredients, I set myself to task. 35 minutes later with OMG! delicious delectable smell in the air, my congo bar was ready. And I tell you...it was SINfully delicious. For chocolate lovers out there, do try this, You won't regret baking this..even if its midnight..like i did :)

right out of the oven ......the smell was so sinful :)


 Here's the recipe from Bakerella for you to try.

Congo Bars

2 3/4 cup all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter, softened
1 lb. light brown sugar (Oh my and thank you!) I use 300 gram only. :)
3 eggs
1 teaspoon vanilla
11.5 ounce package milk chocolate chips I use 200 gram Callebaut chunky chocolate and 50 gram of butterscotch chips
1 cup chopped pecans (optional) I use 1 cup of walnuts

By mixer:

Sift flour, baking powder and salt in a large bowl. Set aside.
Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chips and then pecans.

By hand:

Sift flour, baking powder and salt into a large bowl. Set aside.
Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
Add eggs one at a time to butter mixture and stir well after each egg.
Add vanilla, chocolate chips and nuts. Mix well.
Add dry flour mixture and stir until well combined.

Coat a 13 X 9 pan (I used 9x9 pan) with non-stick spray and spread batter evenly into dish.

Bake at 350 degrees for 30 minutes or until top is golden brown and skewers inserted in the cake comes out clean. Make sure you don’t over bake.

Candy Buffet

Candy Buffet is gaining much popularity in Malaysia nowdays where you can find them at weddings, birthday parties and also at corporate events. Candy Buffet is actually a table spread with all kinds of candies, chocolates and can be customised by including cakes, fruits or even chocolate fountain. The idea was to do away with door gifts, "bunga telur", goodie bags etc by offering the candy buffet where guest can pick and choose the items that they like to eat. A small container or glassine bag is also offered for guest to take-away their favourite things. For those who are interested to have candy buffet at your special event, do give us a call and we can customise your buffet according to your budget, theme, colour and favourite sweets. The price quoted would include the condiments, rental of the candy jars, togs, scoop, and chocolate fountain (if opt for one), all decorations and the boxes/paper bags.

For an idea what candy buffet looks like, below is a picture of a mini candy buffet with 3 spreads of candies ie. nougat, almond crisps and sugared almonds (for 150 guests) that I did for my sister's wedding recently. She chose a mini version since apart from the spread, we also gave out "bunga telur" in the form of chocolate chip cookies to the guest. The candy buffet is therefore an addition for the guest to indulge themselves in these sweets.

Wedding Favors for my sister's wedding

The past few weeks had been hectic arranging the wedding reception for my sister who recently got married. From arranging the wedding place, to guest lists to wedding favors & candy buffet and taking care of little Marissa since I'm maidless at the moment :( Luckily my cousin in Singapore offered to do the wedding cake or else i don't think my sister would have a cake to cut on that day :) :) :). 

My family had flown to Sydney for the akad nikah on 23 September 2011 and the wedding reception was held at Rebung on 2 October 2011. With few days left after Sydney for the reception in KL, it was a rush to finish off the wedding favours, arranging flower decorations and all others nifty things with only BB messenger connecting me and my sister (who only arrived in KL a day before the reception!) to discuss the wedding event.
 
The place at Rembau House, Rebung in Bangsar was like a "kampung house" with wooden floors, decorated with candles and flowers. The ambience was very serene and food was awesome with dishes like daging salai masak lemak cili api, ayam kalio, meehon soto, rojak buah, popia and the ever popular teh tarik. The guests were lovely with gatherings of family and friends and the new extended family members all the way from Ireland.
 
Had a lovely, lovely day and would like to thank all who attended the wedding a heartful thank you for making the event meaningful and a merry one. I wish both my sister and my brother in law happiness always and may they have a beautiful life together until death do they part.

Will post pictures once I have them from the photographer. In the meantime, the wedding favors that I did for the wedding is attached.

Almond Crisps and Danish Butter Cookies

Dear All

Salam Aidilfitri to all my friends and hope you had a good time celebrating with your love ones. Walaupun dah seminggu raya berlalu, I am still here in the kitchen whopping up some raya goodies for my customers especially the almond crisps and danish butter cookies. I have also opened up once again, my normal menu especially birthday cakes and whoopie pies. Just drop me an email or sms me if you wish to order. Hari Raya Aidilfitri 2011 Cookies and Kek Lapis

We are now accepting orders for Hari Raya Cookies for our melt in the mouth Danish butter cookies and Green Tea Shortbread and our delicious Kek Lapis Sarawak.  The cookies are packed in a square container and the kek lapis comes in 2 sizes: Full cake size (7" x 7") or Half cake size (3.5" x 7"). Our offerings are as follows:

COOKIES

1. Danish Butter Cookies
 If you love the danish butter cookies in the blue tin, you will definitely love our version too that is buttery and melts in the mouth. A container cost RM24.00.








2. Green Tea Cookies
Try our green tea cookies for a different flavour. With a subtle taste of green tea, these little green cookies are sure to "wow" your visitors with its originality and delicious taste. A container cost RM25.00.

Instructions on How To Bake Our Cookies
(a) Simply defrost the dough from the freezer in the refrigerator. These will take a few hours so plan ahead. You will know the dough is ready when it is still chill but can be easily scooped out using a spoon.
(b) Line your baking tray with parchment paper or use non-stick baking tray.
(c) Use a melon baller or small spoon or teaspoon size ice-cream scoop and scoop the chill dough into a baking tray.
(d) Remember! Baking tray should be cool when the dough is transferred so that the cookies don't melt which will result in flat cookies.
(e) Bake about 10-12 minutes in the oven until brown and done. Best to place the baking tray in the middle of the oven to ensure proper heat distribution.    
(f) Remember to keep the dough cool in the refrigerator in-between batches.
