Chef Wan's Emperor's Fried Sea Bass


During the Chinese New Year hols, I decided to try this Emperor's Fried Sea Bass recipe from Chef Wan that I saw at the Asian Food Channel. Was happy to say that the fish was delicious and was a hit with my family. To those who love good food and fish, try this recipe. Its simple and really easy to do.
Emperor's Fried Sea Bass
1 Fillet of Sea Bass, rubbed with salt, 2 Tablespoons / 1 oz Corn Flour and 1 Egg
125 ml / 4 fl oz Vegetable Oil for frying
3 Cloves Garlic, diced
¼ Cup / 2 oz Fine Sugar
½ Cup / 4 oz California Golden Raisins, finely diced
2 Tablespoons / 1 fl oz Fish Sauce
2 Tablespoons / 1 fl oz Plum Sauce
6 Red Chilies, finely pounded
¼ Cup / 2 oz Peanuts, pounded
1 Sprig of Coriander
2 Sweet Oranges, squeezed
Spring Onions and Lettuce for garnish
1 Cheek of Mango, cut into cubes
3 Tablespoons / 1 ½ fl oz Tomato Ketchup
Method:
1. Fry the Fish, which has been rubbed with Salt, Corn Flour and Egg, till crispy. Set aside.
2. In a frying pan, fry the garlic, pounded chilies, tomato ketchup till fragrant. Add the California Golden Raisins.
3. Add the plum sauce, fish sauce, oranges juice.
4. Add Vinegar, Salt and Sugar to taste.
5. Add cut mango
6. Lastly add Corn Flour if desire to thicken the sauce.
7. Pour over the Fish and serve.
